Competition heats up at 2018 Hilton Food & Beverage Masters Event

The final round of the Hilton Australasia Food & Beverage Masters 2018 took place on 23 January at Hilton Brisbane with winners announced the following evening at the closing awards.

Open to Hilton team members across Australia, New Zealand and Fiji, the competition showcased the best in food and beverage talent within the company.

Candidates participated in a series of local heats before 37 finalists were selected to participate in the ultimate showdown, fighting for titles across four disciplines including the Bar Cup, Barista Cup, Wine Cup and Culinary Cup.

12 Culinary Cup finalists battled it out side by side on a line-up of four cooking stations fitted out with a combination of Electrolux domestic and professional appliances.

Each competitor was allocated 3 hours to plan and prepare 2 sets of entrees, mains and desserts using key ingredients from a mystery box revealed just before commencement of the competition.

Judges for the Culinary Cup panel included Electrolux ambassador and Stokehouse executive Chef, Richard Ousby along with internationally acclaimed Chef Sean Connolly and Cathy Tindall from Hilton Surfer’s Paradise.

Judging criteria included flavour, visual presentation, use of mystery box ingredients, creativity and consistency of the dishes. Technical judge Nick Marsden from Stoddart marked contestants on technical components encompassing hygiene, food wastage as well as the use of the kitchen equipment.

Sophie Bengco (Hilton Adelaide) was awarded the winner of the Barista Cup; Patrick Thackeray took out the Wine Cup category; Alexis Szymanski (Hilton Queenstown) secured the Bar Cup with William Lee (Hilton Sydney) taking out the Culinary Cup.

Congratulations to William Lee of Hilton Sydney! As the winner of the Culinary Cup, Electrolux Professional along with distributor Stoddart are sending Lee on a trip to Kuala Lumpur, Malaysia for the 2018 World Chef’s Congress followed by a tour to Electrolux Professional’s factory and HQ in Pordenone, Italy.
